The ice you use in your cocktail matters!

Within the hospitality industry, it’s known fact that when it comes to cocktails the type of ice you use is extremely important.

Cocktails like Old Fashioned, Manhattan and Negronis are best served on a large singular cube to control the dilution. This style of ice not only keeps the class cool, but also helps you enjoy your drink slowly along with providing great presentation.
The Hoshizaki brand make a range of ice machines which produce a 28mm cube (28 x 28 x 32) making this the perfect shape of ice for a whisky or scotch on the rocks!

On the other hand, flake ice is also a popular choice (Depending on the cocktail you’re making of course). Yes, it may melt quicker than a large singular cube, however there are a few cocktails which this can add an undeniable texture and look! Flake ice is known to be best for slushie-like cocktails such as a margarita, strawberry daquiri or mint julep!


Cocktails don’t have to be difficult, here’s an easy Old Fashioned with 4 ingredients.


  • 2 ounces of bourbon or rye whiskey
  • ¼ ounce simple syrup
  • 2 dashed of Angostura bitters.
  • Orange peel or Luxardo cherry for garnish (optional)

Combine the simple syrup and bitters.

  • Put a large cube of ice in a glass of your preference and pour over the ice.
  • Add the bourbon or whiskey and stir for approximately 30 seconds to chill and dilute.
  • Garnish with an orange peel or luxardo cherry and enjoy!
